Diary's Of A Somewhat Vegan... Day Nine

Veg Date: 0009

Today was just what I needed... I got to relax and I got a ton of stuff done as well! I can live with that!
Today was just easy all around... Monday is my day off so I slept in, rested when I wanted to rest and when I didn't want to sit down I was getting my place clean! It was fantastic!
With that though for the majority of the day my body clock was way off... and so was they way I ate... Minus dinner today was a snack around type day... and it worked... I didn't over eat... I just ate little bits as I got hungry... I'm ok with that system!
Other things that happened today... The small group I go to at Access (I go to Tara's Small Group... you should come too!) started up again and it was a blast getting back together!


Today's Menu: (in no particular order...)
Apple Sauce
Banana
Orange Juice
Grape Juice
Water
Vegan Banana Bread (Tiffany made it and it is AMAZING!!! she let me have a few pieces... I want more! I'll see if I can get her to share the recipe soon!)

Dinner was the only legit meal and I made more Potato Soup! That stuff is LEGIT! Recipe tomorrow!

Like I said before today was great! I can't wait to try and top it tomorrow!

Diary's Of A Somewhat Vegan... Day Eight

Wow! Today has been a great day... and not even just food!
Today happened quick and was jam packed with things but it was all worth it!
The day started off with some of the craziest fogs I've ever driven in (literally, not figuratively)... Then Access... wow... Access was awesome today! The band and Jason were ON today! I like it when that happens...

After that was lunch... Today's lunch... one clue


And it was delicious!
After eating and a quick nap it was time for Access Night of Worship...
It was AWESOME! Our band is always fantastic not to add the efforts of Josh Oswald on sound... it sounded and was great!
All in all today was an outstanding day... but I'm exhausted!

Today's Menu

Breakfast: Apple Sauce, Banana, OJ

Lunch: Ratatouille... Delicious!


Dinner: Spaghetti and Homemade sauce... This is one thing I'm ok at making!

Still going strong and I feel great! Here's to one more day!

Diary's Of A Somewhat Vegan... Day Seven!

Alright folks... as of right now WE'VE MADE IT A WEEK! I honestly can't believe it!
I'm not saying it has been an easy week but it was a great start! I've learned a lot this week and have had a good time figuring out all the in's and out's of this whole thing... I feel good about all of this so far... I don't think you can tell a difference by the way I look (yet) but I feel better... and the best stuff is still coming...

Here are all the juicy details about day seven!
Started my day off going to Connor Graffam's basketball game to do some video work... I went for work but it turned out to be a great time... those kids were super fun to watch... and it felt good to feel superior to someone athletically and I think I could've beat most of the elementary kids out there... so pat on the back to me...

Then came what I'm calling "THE TEMPTATION ZONE!" I've wanted to go to Lakeland's PigFest for years now... the timing has just never worked out... As it happens the first year I do make it is the one time I'm not eating meat! Everything looked sooo good! There were even things there that I wouldn't normally like that I would have scarfed down today! BUT I came out victorious! I ate no meat. It was tough but I did it!



The rest of the day wasn't as much fun to talk about errands and some other work things... Me and Tiffany did stop by Books A Million and happened across this book though...


I don't need it though... I feel like I'm writing my own! haha...

Today's food was kind of an odd smattering and not many real defined "meals"

Breakfast - Banana and OJ

Lunch - Veg Soup and Corn (at pigfest)

This is where its tougher... I had some leftover beans and rice a banana and some guacamole and whole wheat chips... so there was never a sit down dinner time... It just didn't work out today on that end... we'll get it together tomorrow.

Diary's Of A Somewhat Vegan... Day Six

Today has been a pretty different day that ended very well...

Today started off pretty normal... Got to the office and finished up some last minute things... then I went to Guitar Center... everything was smooth up to this point until on the way back to the office Jordan and I got into a fender bender and got rear ended (I know this has nothing to do with food... but its about my day... sorry)... Everyone was fine but you gotta love a good car crash to start your day (Special shout out to Jordans fender... you will be missed)... So that was interesting...



On the food side of things today felt a little different/weird... and I'm thinking its because today is the first day that I haven't cooked for myself all week. I had leftovers for lunch and took Tiffany out for dinner so I didn't have to do much... So I guess I feel like I have less to talk about in that way...

I think one of my favorite thing today has to have been getting and posting Bethany Remsberg's guest post... it seriously made me happy and want to keep this whole thing up... we all need some inspiration sometimes and Beth's post was a good one for me! Thank you again, Beth! You are the best!

Today's line up:

Breakfast: The Norm

Lunch: Leftover Rice and beans and Cantaloupe

Dinner: Gosh- Edamame, Salad, Vegi sushi and Vegi Pasta

Things I learned at dinner...
1. I don't like the seaweed wrapping on sushi, not a fan...
2. Eel Sauce is not made from eels and covers up the taste of seaweed
3. Small amounts of Soy sauce makes other food better...

I'm Vegan Because I Love Animals…I Love Eating Them in Excess.

A year ago, our 8 month old daughter Normandy, already struggling with a severe kidney disorder took a turn for the worse…through a series of surgeries, procedures and infections, we would on average spend a week in the hospital every 10 days. I'd typically leave her hospital room for no more than 15 minutes a day to run down to the cafeteria and stock up on (here comes the oxymoron of the century) terribly unhealthy hospital food. I got used to spending my days isolated and sedentary in sweatpants, overeating "comfort" food. 
When we were at home my husband Ron and I would pride ourselves in buying organic. Much to the demise of my skinny jeans, I discovered there is organic bacon, cheese, sugar, chips, and I kid you not...aerosol pancake mix. By the summer of 2010 I had gained 55 pounds and took a flying leap to the bottom of the priority list. 
At the end of August Normandy had her last surgery to date and we have remained out of the hospital since. This blessing granted the time and headspace to finally be self aware…I was unhealthy, uncomfortable, exhausted and depressed. In September, at the height of these realizations, my dad suffered 2 strokes within a week and was left blind with a skewed sense of reality. He was exactly twice my age and I felt as if I was staring into a crystal ball at what the next 31 years would bring and how quickly they'd pass me by. Things needed to change. 
After plenty of research I believe the healthiest way to eat, the closest anyone can come to rewriting poor genetics and reversing disease is to live an active Raw Vegan lifestyle. Simply put, a raw vegan diet consists of unprocessed, raw plant foods that have not been heated above 115 degrees. Typical foods include fruit, vegetables, nuts, seeds and sprouted grains and legumes. Though I believe whole heartedly in it, I haven't been able to stick to a 100% raw vegan diet for more than 2 weeks at a time. It's okay. This isn't an extreme last-ditch effort to fit into a dress; this is for the rest of my life and I won't let an all or nothing attitude sabotage me like it has so many times before. 
Maybe someday I'll be a glowing raw vegan goddess. Maybe someday I'll smell like pachouli. Maybe someday I'll look great in hemp yoga pants. Maybe someday everything I do will honor the earth…
This is what works for me today…
~100% vegan except for when I am not…I like to have coffee with half and half a couple of times a week.
~Incorporate raw food into every meal.
~For me, granulated sugar and flour is enemy #1, even more so than meat.
~Counting calories keeps me grounded and aware that being vegan isn't a free pass to Skinnyville.
~Closet eating Hershey Miniatures while pretending to take a shower wastes water and makes you fat.
~Breaking every aforementioned rule doesn't make me a failure or give me the right to jump ship.
~Living one day at a time while embracing the big picture and what is to come isn't a contradiction; it is a recipe for success.


Recipe Time - Chocolate Banana Shake

This recipe comes from Beth Remsberg - Vegan Superstar and Hillarious friend!

Chocolate Banana Shake
This is such an important recipe especially for someone transitioning from an extreme polar opposite way of eating. This shake is delicious with no new tastes to adapt to. It's so quick and easy…it will reel you back in when you're ready bail. 
1 Tbs Raw Cacao powder
Don't confuse with cocoa powder. Pick it up at a health food store. It's pricey, but it lasts a long time.
1 Tbs of Agave nectar 
1 Frozen Banana
Frozen Bananas are the key...they make it creamy and thick...make sure you freeze ripe bananas...no more green and at least a few decent brown spots on the peel! Remove peel before freezing.
1 Cup of Almond Milk
We buy Silk Pure Almond Unsweetened…it is only 35 calories per cup and has 50% more calcium than milk…find a recipe online to make your own almond milk and this becomes a RAW vegan recipe!
Mix in blender until thick and creamy!
So delicious and ridiculously healthy...You've probably heard through clever marketing that pomegranate juice has the most antioxidants ever...well Raw Cacao has something like 10,000 times that amount...I will never look older than 31 years old...maybe younger from drinking chocolate shakes everyday...who would have thunk it!

Diary's Of A Somewhat Vegan... Day Five

Alright we made it to day five! 

Today's been good... 

I know I'm only on day 5 of this adventure... but I'm really starting to like it... I like the things it's forced me to do... I've cooked almost every meal I've had this week... and as dumb as that may sound, I'm proud of it... One of my resolutions was to start cooking things for myself and to learn how to cook well... this has kind of cornered me into doing that for myself and I am liking what's coming out, A LOT!
I'm excited to find new and better ways of making foods that aren't horrible for me and being in control of what I'm eating. 
I know its semi cliché, but I feel more energetic and am happy about what I'm doing right now... So here's to Last Minute Decisions

All that said here's today's menu:

Breakfast: Banana, Apple Sauce, OJ 

Lunch: Leftover Potato and Carrot soup... its the simplest, best thing ever! (recipe coming soon)

Dinner: Tonight I took my first shot at Veggie Stir Fry... I've never done this before so it was an experience... and it turned out well... Onions, Carrots, Zucchini, Snow Pea's and Broccoli... all around good meal!

Any good idea's for dinner tomorrow? 

Diary's Of A Somewhat Vegan... Day Four

Another good day...

Challenging but good.

At this point I am tempted by any and all junk food... it is EVERYWHERE! I went to Wal-Mart today to buy some things I need and even the walmart "deli" food smelled good... this is getting sad.

All that said I'm liking discovering new ways to make food and repurposing food from sides to main courses! I'm really starting to enjoy certain aspects of this... We'll keep it going for a bit...

Today's Food:
Breakfast: Apple Sauce, Banana, OJ

Lunch: Leftover Rice and Beans (still fantastic) and some Strawberries and Pineapple

Dinner: Homemade Potato Soup!

DINNER WAS AWESOME! I like to think my food is going to be horrible so if it comes out even slightly good I am ecstatic! Not only was it Homemade but I changed the recipe up and made it fantastic! I can't wait to eat more of it tomorrow!

Recipe Time - Black Beans and Rice


What you need:
1 15oz  can of black beans
1/2 white onion
1 cup white rice or 1 package of yellow rice (suggested)
2 tbsp Cilantro paste
1 tbsp extra virgin olive oil

Instruction
Make rice... thats all I'm gonna say about that.
Heat oil in large sauce pan and chop onion
Throw the onion in the sauce pan and cook till translucent
Add Beans and Cilantro paste and cook till hot...

Serve on or beside rice...

Enjoy...

Diary's Of A Somewhat Vegan... Day Three

Today has been a great day...

The only downside to this stricter diet today was that in today's staff meeting Jason brought in donuts... publix donuts... TEMPTATION TO THE MAX! I could eat those till I get sick... but I resisted! I'm no hero... please don't put me on a pedistal...

Also today was a great day at the Access offices... Its cool seeing everyone get behind a series and some ideas like we did today... good things are on the way...

Today's food

Breakfast: Apple Sauce, Banana, OJ (I like to keep breakfast pretty consistent)

Lunch: Soup (Yeah, I know)

Dinner: Black beans with Yellow Rice and Green beans.... It was the BEST! It turned out soo good... I'm so excited to eat the leftovers tomorrow!

One last thing... thanks you everyone who's been so supportive in my little food adventure... you make things like this fun... Thank You So Much!

Yesterday I posted that I was over soup... and thats true... I am OVER SOUP! For now at least...

Diary's Of A Somewhat Vegan... Day Two

Today has been a good day.... Minus some set backs...

I'm definitely feeling not having any caffeine in my system. Headaches most of the day and that sort of thing.... But I think things will get better in the coming days!

I'm also sick of soups! But I'm having a lack of inspiration on what to make... I'm not used to making vegetables the main dish... In my head there should be a protein... And because of the way I've set everything up it's more difficult without bread too... We'll see if we can't get it all figured out here soon!

All that said, calorically, I'm still owning it between all the healthy food and the exercise today... It is a good thing... and its even shown on the scale!

Food today:
Breakfast
- Just an Applesauce
Lunch
- More Minestrone soup
Snack
- Almonds and Pistachios
- Grapes
- Cantaloupe
Dinner
- Whole Wheat Spaghetti with home made sauce
All that said today has been a great day! Looking forward to tomorrow.

Went on a bike ride today... I took a new route too... I liked it... I think as I get more comfortable with it I'll add more to it.


But for the mean time... My legs are a little mush...

Grocery shopping on this type of diet is a lot more expensive and a lot harder to do...

Because I'm trying to buy a lot of fresh things I am at the mercy of what the stores had...
Here was my first "veg" grocery store venture...

Contents:
- As many fresh veggies that I could get my hands on (minus brussle sprouts)
- Beans (good for your heart) (<-- I'm twelve, sorry)
- New spices for recipes I've found
- Whole Wheat Pasta
- Pistachios and Almonds
- Fresh fruit (to keep it interesting)
- A lot of Vegetable stock (I'm trying to stay honest and not use chicken stock)

Things I forgot and or already need more of that I'll get soon:
- Fruit juices (apple juice, grape juice) I'm not up to only drinking water quite yet... soon
- More veggies
- Hamburgers (Buh, I wish)

This whole thing has started off pretty ok...

Here's the break down of food yesterday:

Breakfast: Organic Applesauce, Bananas, and a cup of Orange juice

Lunch: Ministrone Soup with a side of Broccoli and Yellow Squash.

Dinner: Kind of a snack around type meal with Pistachios, Almonds, Strawberrys, Banana, Pineapple and Acorn Squash...

All in all I feel like I ate enough and wasn't to upset with how it all worked out.

Calorically I am kicking but... all that food combined is way under my normal consumption. (ministrone soup only has 100 calories a serving... not bad and filling)

I think this is a good start to the week!

Last Minute Life Changing Decisions...


It's not THAT last minute... but in the last 2 weeks I've decided to take on a new challenge...

I'm a Vegetarian/Semi-Vegan for the next week (and probably longer once I get the hang of it)...

Here's what I'm doing: Fruits, Veggies and a Whole Grains only... I'm also cutting out all soda, junk food and processed food during the week...I will use small amounts of dairy if necessary but nothing crazy... So lots of water and healthy stuff...

I am not the vegetarian type... like not in the slightest... I enjoy meat and every sort of junk food... so this is going to be tough...

Honestly, I'm not looking forward to this... but I'm going to try to make the best of it and really make the best of it... I'm gonna learn how to make some delish vegi foods...

I'm gonna blog about the entire experience too... so keep an eye out for it!

So... It's the middle of January... and I haven't posted at all in the new year... oops...

Fantastic!

On a semi serious note... January blogs usually start off with a new years resolution type blog... so why not?
This year I've tried to set some attainable goals and some things that might take a life to perfect... but why not start working on them now?

The list includes things that I have been working on since October (See here) so the cooking thing and the exercise thing for sure (I'd still like to find ways to be more frugal too... but am horrible with coupons)
Add to the list... Blogging better, Eating better, Less Caffeine, More quality time with friends, and some long term projects (that I'll talk more about later) and you've got my Resolutions...

AND It's probably better that I haven't set them now... better late than never...

So here's to a fantastic 2011!
